At this clock time of class if you ’re a veggie gardener , you ’ve experience it — zucchini laugher . One day you go out and see this cute piffling zuke and think I ’ll give it one more day and the next twenty-four hour period you go out and it grew into a baseball game cricket bat . It ’s like overnight it pay back on some steroids and went ballistic .   Now it ’s too expectant so what do we do with them besides obscure them under the bottom in case an interloper comes in ? Well you could use them as door stops or take them to the fair but here are 4 ideas to eat them !

savoury Zucchini PancakesTake 2 cups of grated zucchini , append two beaten eggs , 2 tablespoon of flour , and 2 teaspoons of some refreshing herbaceous plant you have and 1 cup feta or mozzarella or cheddar or whatever cheese you have ( please , no Velveeeeeta ) . If you want more , then just up the element like 3 cups zucchini , 3 eggs , 3 tablespoons flour , etc . Just do n’t up the herb , keep it at 2 tsp so not to deluge the flavor of the courgette ( what ? courgette has flavor ? Yes , at least two change do – Costata Romanesco and Benning ’s Green Tint ( not a courgette but a delicious summer squash ) . All the others , in my legal opinion , are worthy of either the compost nap or the chicken coop or both ) Then saute them in olive oil until brown on both English . This is my favorite way to cook super - sized zucchini .

Garlicky Zucchini MedallionsSlice them into medallion and saute them in olive crude with some crushed garlic cloves until attendant in a BIG fry pan . Sprinklelightlysome cherry-red pepper snowflake and add fresh grated Parmesan cheeseflower on top and falsify a few min more till melted . This is also great with a little remaining over spaghetti sauce drizzled over them .   ( Can you really drizzle spaghetti sauce . No — but you get the idea - don’t overwhelm them . )

Zuchinni Soufflini(This one comes from my mom - thanks mom!)1 1/2 pound zucchini1 large onion , chopped3 TLB butter1 cup shredded cheddar cheese1 tsp salt and 1/4 tsp pepper2 beaten eggs1 1/2 cups diffuse moolah crumbs2 TLB butter

Cook mash whole for about 5 mo in boiling water . nerveless . die into cubes . Saute ’ onion plant in 3 TLB butter and add to zucchini . excite in cheese and seasoner and set aside assortment to cool before adding beaten egg . smooch into buttered 1 quart casserole . Toss bread puke with 2 TLB melted butter and sprinkle over casserole . Bake 30 - 40 minutes at 350 ° F about 30 minutes or until tongue inserted come out uncontaminating . Serves 4 - 6 people .

Of course there is always the ill-famed zucchini wampum but how about cocoa zucchini moolah ? I got this recipe from a acquaintance many moons ago and it is excellent . Your Thomas Kyd , Quaker , partner or married person will never know they are rust something respectable !

Chocolate Zucchini Bread2 ¼   cup all - aim flour½ cup unsweetened cocoa powder1 tsp baking soda1 tsp salt1 ¾   cup sugar½ cup butter½ atomic number 6 vegetable oil2 ballock , large1 tsp vanilla extract½ cup buttermilk2 cup unpeeled courgette , grated6 oz choc chips¾ c chop walnut

-Preheat oven 325 point . Butter and flour a 13 ” x 9 ” x 2 ” bake pan - Sift flour , cocoa pulverisation , baking washing soda , salt into big bowl.-Beat sugar , butter and oil in orotund bowl until well blended . Add ball 1 at a clock time , beating well after each addition . Beat in vanilla extract selection . Mix in ironic ingredient , substitute w/ buttermilk in 3 addition each , shut down in zucchini . Mix in choc . chips + nuts . Pour into the baking pan . Bake until toothpick insert in center comes out fair in about 50 minute . nerveless completely in pan .

So the next time you get a runaway , do n’t despair , now you have some musical theme on how to use them besides hiding them under your seam !
